Do you like Key Lime Pie?  If so, it is certain you will like these cupcakes!  This is what you need:

Cupcakes:
1 box lemon cake mix
1 box (4-serving size) lime gelatin
3/4 cup water
1/3 cup lime juice
1/3 cup vegetable oil
3 eggs

Heat oven to 350 Place paper baking cups in each of 24 regular size muffin cups.

Mix cupcake ingredients listed above on low then on medium, scraping bowl occasionally.  Pour into baking cups and bake 19-24 minutes or until toothpick inserted in center comes out clean.  Cool in pan 10 minutes. Remove from pan.

Glaze
1 cup powdered sugar
2 1/2 tablespoons Key Lime juice

In small bowl mix powdered sugar and lime juice and stir until smooth. With a toothpick, poke 3 -4 holes in cupcakes then put some glaze on top of cupcake.

Frosting
1 pkg (8 oz) cream cheese, room temp
1/4 cup butter or marg, room temp
1 tsp vanilla
3 1/2 cups powdered sugar

In large bowl, beat cream cheese and butter on medium speed until light and fluffy.  On low speed add vanilla and powdered sugar, beat until fluffy.  You can spread frosting onto top of cupcake or use the bag and tip to swirl your icing onto the cupcakes.  (I had to add some more powdered sugar to make the frosting thick enough for my icing bag.)

Merry & Bright I love Christmas.  I remember as a little girl the magical times my mom orchestrated for our family and friends to truly make the season “Merry & Bright.” They were things like baking the most wonderful Christmas goodies.  Lots and lots of of goodies.  We would package them up on plates and deliver to shut-ins and special family friends.  There were four of us kids, so we did not get out of the car (Mom, working smart here!) I mean, there were no seat belt laws, there were probably not any seat belts! Anyway, She would hop out of the car, run to the door and present our gift and point to us and we would all wave, shout “Merry Christmas!” Sometimes our friends might walk Mom back to the car and say hi and give hugs.  Another way Mom made our season “Merry & Bright” was by opening our home for gatherings.  Mom was the choir director at our church for many years.  She would always have the choir (about 30 members!)  and their families over one Sun
