Happy Valentine's Day

I did a little baking for my Valentine's.  First I made Blueberry Muffins for breakfast.  Yum.  (No picture, sorry!)  Then I made these yummy looking chocolate cookies! The recipe is easy and quick.   1 box of Chocolate Cake Mix 1 1/2 TBSP all purpose flour 1/2 cup butter, softened 2 eggs 2 tsp vanilla *Optional - I added 1 cup of chocolate chips.  I wanted to use red M&M's but I forgot to pick some up. Sprinkles 1.  Preheat oven 350 2. Mix cake mix, flour, butter, eggs, and vanilla with electric mixer. 3. Stir in chocolate chips or M&M's. 4. Spill some sprinkles onto a plate.  Form dough into tablespoon size balls and dip top in sprinkles. 5.  Bake on ungreased baking sheet for 10 minutes.  Let cool 10 minutes then take off cookie sheet and place on cooling rack to finish cooling. I love a recipe that is easy and delicious!  The cookies turn out nice and chewy and moist.  Chocola...

I LOVE CHRISTMAS!

I hope you are enjoying this Christmas Season!  I have done a few fun projects.  One of the first of the season was coming up with decorations for our tree.   Mark helped me.  We put our elf hats on, went outside and gathers our materials then sat outside and got creative!  We moved at the end of the summer and we have not unpacked much since we don't know when or where we might go from here.  So instead of finding our Christmas decorations we went with a semi-natural decor.  We gathered lots of pine cones and glittered them unmercifully!  It was fun!  I had some picks of roses and greenery and stuck them in the tree then we put the glittered pine cones on the tree.  We wanted some garland so we found tiny pine cones  added glitter again, then strung them on jute.  I made stars out of vines and jute and put them on the tree, too. Hank added the candy canes, of course!!! It turned out nicely.  ...

Yum......Cake!

This was a favorite I used to bake quite often back in the 80's.  So I decided it would be a great come back to use to help the Father's Day celebration at our house.  If you decided to bake one for your household, I would suggest you eat just one piece and share the rest.  It is sweeeeeeet! MISSISSIPPI MUD CAKE Cake Ingredients 2 cups sugar 1/2 teaspoon salt 2 cups all-purpose flour 1 stick butter or margarine 1/2 vegetable oil 1/2 cup cocoa powder 1/2 cup water 2 eggs 1 teaspoon baking soda 1/2 cup buttermilk 2 teaspoons vanilla extract 1 bag mini marshmallows Icing 1 stick butter 3 tablespoons cocoa powder 6 tablespoons milk 1 box (1 lb.) powdered sugar *1 cup pecans, chopped 1 teaspoon vanilla extract Preheat oven to 350.  Grease and flour 13X9 pan. Combine sugar, salt, and flour in large mixing bowl.  Set aside. Bring butter, oil, cocoa powder, water to a boil in saucepan.  Add to the flour m...

Oopps, I Did It Again!

I could not help myself.  I made the Skillet Apple Pie again.  Yep!  We celebrated Lindsey's birthday, and of course we have to have chocolate for her, but I knew neither of my son in laws care for chocolate, so since the apple pie was a really big hit when I made it the first time, I did it again! And it was a hit this time around, too!  You have to bake this - easy and delicious! I guess I got the dessert before the main dish.....not a bad thing, but this is what we had for the birthday dinner: Spinach Lasagna Rolls, Italian Salad, Garlic bread, and the desserts. 9 lasagna noodles, cooked according to box directions 10 oz. frozen chopped spinached, thawed & drained 15 oz. fat free ricotta cheese 1/2 cup grated Parmesan cheese 1 egg salt & pepper 32 oz. tomato sauce 9 TBSP (about 3 oz.) part skim mozzarella cheese, shreded Preheat oven to 350.  Combine spinach, ricotta, Parmesan, egg, salt & pepper in a medium bow...
