True Story: Make Twinkies Healthy (Smile)

True Story: I was at the day old bread store to get some buns for a cookout for Memorial Day AND while I was there I spotted Twinkies among other sweet no-no's.  So I think to myself....there will be lots of people at my house and I do plan to make pies (Lemon Pies - yum) and have watermelon and cookies and strawberries, but what if they want a quick sweet something????  So I picked up the Twinkies, some cheese crackers, a mini pecan pie, and the buns.  As it turns out, no one ate the Twinkies.  Well, some of them were gone, but more than half of them remained in the goodie jar.  So I decided I must make those Twinkies into a healthy snack!  (giggle)  So...... First, put the unwrapped Twinkie in a bowl.  Then put about 3/4 cup of sliced strawberries on top of the Twinkie.  Next is the Reddi Whip and wala!  Healthy?  Ok, maybe not, but it was good!

Strawberry Upside Down Cake, A Yum Dessert

This is a recipe I found on Pinterest months ago and I am just now getting around to making it.  It is one of those EASY and Very Good recipes that I will use many times.   Strawberry Upside Down Cake 1 cake mix  (I used white cake, but you can use yellow or even chocolate!) 2 cups crushed strawberries (I used fresh strawberries and added a little sugar, put them in a sealed bowl and shook them to juice them a little.) 1 box strawberry jello 3 cups miniature marshmallow. In a 9 X 13 pan, put crush strawberries on bottom.  Sprinkle with jello powder.  Put marshmallows on top. Then mix cake according to directions on box.  Pour on top of marshmallows. Bake 350 for 40-50 minutes.  Do the toothpick test.  Let cool for 15 minutes.  Run a knife around the edge to loosen.  Flip cake out on serving platter.  I put a dollop of whipped topping on each piece I served.
