Pretzels

This was a fun little snack I wanted to try.  But I will have to warn you - watch it the last 15 minutes really closely.  I had them in the oven, stirring every 10 minutes.  The recipe said to cook it 30 minutes, but I should have taken them out at 20.  The last 10 minutes turned them too dark.  It is probably my oven, so if you try this - keep your eyes on them.  Here is the recipe: 16 oz. pretzels - put in a roasting pan Mix: 1/2 cup oil, 1/2 cup sugar, and 2 teaspoons cinnamon Pour mixture over pretzels.  Place in 300 degree oven.  Bake for 30 minutes.  Stir every 10 minutes. Take out of oven and spread out on paper towels to cool.  Store in airtight container. Another little tip - I would double the cinnamon next time I make it.  But I like cinnamon!

Blueberry Zucchini Bread

My mom used to make us Zucchini Bread and I always liked it.  So when I saw this recipe for Blueberry Zucchini Bread I knew it would be awesome.  The recipe suggests you use four mini-loaf pans, but I used 1 regular loaf pan and one mini one and cooked  the larger one about 20 minutes longer.  Here is the recipe: Ingredients: 3 eggs, lightly beaten 1 cup vegetable oil 3 teaspoons vanilla extract 2 1/4 cups white sugar 2 cups shredded zucchini 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking powder 1/4 teaspoon baking soda 1 tablespoon ground cinnamon 1 pint fresh blueberries Directions: Preheat oven to 350 degrees.  Lightly grease 4 mini-loaf pans. In large bowl, beat together the eggs, oil, vanilla, and sugar.  Fold in the zucchini.  Beat in the flour, salt, baking powder, baking soda, and cinnamon.  Gently fold in the blueberries. Strawberry Upside Down Cake, A Yum Dessert

This is a recipe I found on Pinterest months ago and I am just now getting around to making it.  It is one of those EASY and Very Good recipes that I will use many times.   Strawberry Upside Down Cake 1 cake mix  (I used white cake, but you can use yellow or even chocolate!) 2 cups crushed strawberries (I used fresh strawberries and added a little sugar, put them in a sealed bowl and shook them to juice them a little.) 1 box strawberry jello 3 cups miniature marshmallow. In a 9 X 13 pan, put crush strawberries on bottom.  Sprinkle with jello powder.  Put marshmallows on top. Then mix cake according to directions on box.  Pour on top of marshmallows. Bake 350 for 40-50 minutes.  Do the toothpick test.  Let cool for 15 minutes.  Run a knife around the edge to loosen.  Flip cake out on serving platter.  I put a dollop of whipped topping on each piece I served.
