The BEST Homemade Strawberry Ice Cream


 Oh my. This is good. I like strawberry. A lot. But I don't usually choose strawberry ice cream if there are several flavors (like chocolate) available. I got this recipe from my daughter and IT IS GOOD! I would choose this!

The Best Homemade Strawberry Ice Cream

makes 3 cups (I have doubled it)

Ingredients

1 1/2 cups strawberries, hulled and diced

2 Tbsp honey

1/2 cup granulated sugar

1 tsp lemon juice

1 cup heavy whipping cream

1/2 cup half and half

1 tsp vanilla extract

Instructions

In large bowl mix strawberries, honey, sugar, and lemon juice. Allow to sit for about 15-20 minutes to give the strawberries some time to "weep."

Mash the mixture with a potato masher, fork, or pastry cutter until there are no longer any large strawberry pieces (if you prefer a smooth ice cream, use a blender or food processor instead)

Mix the strawberries, heavy cream, half and half, and vanilla extract. Stir just until combined.

Pour the mixture into your ice cream maker, and follow your manufacturer's instructions (mine took about 20 minutes to churn). You can eat the ice cream soft-serve, or freeze it in an air-tight container for 3-4 hours to thicken it up slightly. For best results, allow the ice cream to sit at room temperature for about 5-10 minutes to soften before serving.

Notes

We did put the strawberries in a blender to make the ice cream smooth and we liked it better than with the chunks of strawberry. I did have to drain some of the liquid - I would use 2/3 to 1 cup of blended strawberries so there is not too much liquid.

December is coming pretty fast, y'all.  And there is this little thing I have done for my kids ever since about 1988. I give my kids a "Happy December" present. When the girls were in elementary school and they came home from school on December 1st,  I usually had a little something laying out on their bed to find. A Christmas sweatshirt I made or a cute pair of Christmas socks or Christmas hair bow - something cute or fun to begin the holiday season. They are now adults, but I still get them something each December 1.  I mail it. Or if I see them at Thanksgiving, I can give it to them. I still do little things - Christmas earrings, Bath & Body Works Peppermint soap, a holiday candle. Oh, and I have a son that I don't leave out of the "Happy December" gifting. He has his own apartment now, so I can give him festive items, like Santa salt and pepper shakers or a Dunkin Donuts gift card for a speciality coffee. Sister's Birthday Gift

I just had to do Mark's idea - and he helped me - to make a gift for Nancy for her birthday.  I had seen this little poem about growing up with a sister and thought it was perfect.  So we went to several thrift stores looking for the perfect sized canvas picture and after only two stops - found it! This is the canvas with the letters I stuck on it and I began there in the bottom corner to paint it a dark brown.  The canvas is a golden with thin trees and some words in cursive in a light brown.   As you see, I was using a paint brush, but I changed to a small roller.  It worked much much better. Completely painted the top and the sides of the canvas a brown color.  Then I let it dry - probably about 30 minutes.  Then pealed off the letters! Here is the finished product: And it's true.  I did tell on her - it was for her own good. :)
