Oopps, I Did It Again!

I could not help myself.  I made the Skillet Apple Pie again.  Yep!  We celebrated Lindsey's birthday, and of course we have to have chocolate for her, but I knew neither of my son in laws care for chocolate, so since the apple pie was a really big hit when I made it the first time, I did it again!
And it was a hit this time around, too!  You have to bake this - easy and delicious!

I guess I got the dessert before the main dish.....not a bad thing, but this is what we had for the birthday dinner: Spinach Lasagna Rolls, Italian Salad, Garlic bread, and the desserts.

9 lasagna noodles, cooked according to box directions
10 oz. frozen chopped spinached, thawed & drained
15 oz. fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
salt & pepper
32 oz. tomato sauce
9 TBSP (about 3 oz.) part skim mozzarella cheese, shreded

Preheat oven to 350.  Combine spinach, ricotta, Parmesan, egg, salt & pepper in a medium bowl.  Ladle about 1 cup sauce on the bottom of 9X12 dish.
Place a piece of wax paper on counter & lay out lasagna noodles.  make sure noodles are dry.  Take 1/3 cup of ricotta mixture & spread evenly over noodle.  Roll carefully & place seam side down onto baking dish.  Repeat with remaining noodles.
Ladle with remaining noodles.
Ladle sauce over noodles in baking dish & top each one with 1 TBSP mozzarella cheese.  Put foil over dish & bake 40 minutes.
To serve, ladle a little sauce on plate & top with lasagna roll.

The cake was a Weight Watchers recipe so that was a good. Chocolate, served with whipped cream.  It was really good!  Just ask my little helper!
Diet Soda Cake
1 dry box cake mix
10 oz. diet soda
2 egg whites
Preheat oven to temp. on box.  Spray 9X13 pan.
Mix cake mix, diet soda, and egg whites. Pour into pan. Bake as directed on box.  Use the toothpick test to know if done.  Cool 10 minutes.  Serve with a dollop of fat-free whip cream.

I used a chocolate cake mix and diet cherry 7 - Up.  Use whatever combination sounds good to you.

Merry & Bright, A Devotion

Merry & Bright I love Christmas.  I remember as a little girl the magical times my mom orchestrated for our family and friends to truly make the season “Merry & Bright.” They were things like baking the most wonderful Christmas goodies.  Lots and lots of of goodies.  We would package them up on plates and deliver to shut-ins and special family friends.  There were four of us kids, so we did not get out of the car (Mom, working smart here!) I mean, there were no seat belt laws, there were probably not any seat belts! Anyway, She would hop out of the car, run to the door and present our gift and point to us and we would all wave, shout “Merry Christmas!” Sometimes our friends might walk Mom back to the car and say hi and give hugs.  Another way Mom made our season “Merry & Bright” was by opening our home for gatherings.  Mom was the choir director at our church for many years.  She would always have the choir (about 30 members!)  and their families over one Sun
