Yummy Strawberry Dessert!

Angel food cake is an awesome cake with fruit!  I remember my mom making the angel food cakes by scratch and when she pulled it out of the oven she turned it upside down on a coke bottle to cool!  So, of course, that is what I have to do, too!  Then I had to do a quick dessert, something I could do the night before, but I wanted it to look special and taste delicious.  I looked in several of my cookbooks and I looked at the Pinterest recipes I have saved.  There is the truffle where you cut pieces of angel food cake and layer it with pudding and fruits.  Good stuff.  But I really liked the cake roll.  It just looks elegant and special.  So take a look at my pictures and I will tell you my short cuts.
I decided for time sake to go with the cake mix. It worked really well and tasted great.
Set out two jelly roll pans, lined with wax paper and lightly sprayed with oil.  Mix the cake according to the directions on the box.  Divide the mixed cake mix between the two jelly roll pans.  Set in middle of oven.  Bake in preheated 350 oven for 15 minutes.  Take out of oven.  Flip cake onto cheesecloth that is sprinkled with powered sugar. Peel off the wax paper and then roll up the cake with the cheesecloth.  Let cool for about 30 minutes.  Unroll.  Spoon  sweetened whipping cream on cake then sprinkle chopped strawberries on top of cream.  Then roll up without the cheesecloth and sprinkle the cake with more powdered sugar.  Decorate with strawberries.  Keep refrigerated until ready to serve.

I did make my own whipped topping using whipping cream, vanilla, and sugar, but you could just buy a tub of ready made whipped topping.

Merry & Bright, A Devotion

Merry & Bright I love Christmas.  I remember as a little girl the magical times my mom orchestrated for our family and friends to truly make the season “Merry & Bright.” They were things like baking the most wonderful Christmas goodies.  Lots and lots of of goodies.  We would package them up on plates and deliver to shut-ins and special family friends.  There were four of us kids, so we did not get out of the car (Mom, working smart here!) I mean, there were no seat belt laws, there were probably not any seat belts! Anyway, She would hop out of the car, run to the door and present our gift and point to us and we would all wave, shout “Merry Christmas!” Sometimes our friends might walk Mom back to the car and say hi and give hugs.  Another way Mom made our season “Merry & Bright” was by opening our home for gatherings.  Mom was the choir director at our church for many years.  She would always have the choir (about 30 members!)  and their families over one Sun
